Chia Pudding

This chia pudding is one of my favorite protein-rich afternoon snacks!

Eating a fatty, protein-rich snack around 4-5pm helps me stay energized and full until dinner time, which for me is around 7:30-8pm. It's literally my secret weapon to avoid late night cravings and prevent me from eating all the things when I get home after a long day of work :)

Ingredients:

½ can light coconut milk
 
1 cup unsweetened almond milk 

1/2 cup filtered water

1/2 cup chia seeds
 
1 tsp ceylon cinnamon

Toppings:

¼ mashed banana
 
berries
 
handful of almonds
 
1 tsp. Nut/seed butter
 

Instructions:

1. In a large mason jar, soak the chia seeds in 1/2 cup filtered water for about 5 minutes

2. Then, add the coconut milk, cinnamon and almond milk

3. Mix all well. Let it sit for about 5-10 minutes and then mix well again

4. Place in the fridge overnight or at least about 3-4 hours

5. Enjoy with your toppings of choice

Gives about 4 servings
